Garrotxa is a herbal, earthy, nutty goat cheese from the Catalonia region in northern Spain. It is aged in caves creating a grey mould that gives off woodsy aromas. This cheese was almost extinct in the 1980’s until a young cheesemaker revived it in 1981. Pairs well with chardonnay, pinot gris and crusty breads.
